Cream of Pumpkin Soup
2 cups of pumpkin puree (one 16 oz. can if not using fresh)
2.5 cups of veggie broth
1 cup of light cream or creamy oat milk
1 Tbsp honey
1/4 tsp fresh ground black pepper
1 tsp salt, or to taste
1/4 tsp curry powder
croutons for garnish if you wish
Combine all ingredients, mix and bring to a boil. Enjoy!!
