Vegan Chili

Chili for a Cold Vata Day

Ingredients

2 cans petite diced tomatoes

1 can each of black, kidney & pinto beans

1 green pepper

1 red pepper

½ sweet onion

2 garlic cloves

2 tsp. cumin powder

2 tsp. chili powder

½ tsp. cayenne

Salt

Beyond Meat hot sausages

 

Directions

Chop onion and pepper. 

Mince garlic.

In a large pot, saute’ onion, pepper and garlic in veggie oil.  Add a dash or two of salt.

When onion is translucent, add tomatoes. 

Drain, rinse beans, and add to pot.

Add cumin, cayenne and chili powder. 

Cut vegan sausages into bite size pieces and add to pot. 

Put lid on and simmer for 30-45 minutes. Keep in mind you can make this more or less spicy by adding more or less cayenne and using Regular Beyond Meat sausages versus Hot Beyond Meat sausages.

Serve hot and if it is too spicy, add some vegan sour cream on the top!  YUM!
